Appleby's very special eggs from very special hens. All our hens are allowed to roam free on permanent pasture and scratch in deep straw litter. They are fed on a non GM diet with no artificial additives. Eggs are delivered the day after they were laid so freshness is guaranteed. We are a local family farm where we have produced eggs for 40 years and look after our customers almost as well as we look after our hens.

Bowland Outdoor Reared Pork, Lamb and Beef

Situated in the Forest Of Bowland, an area of Outstanding Natural Beauty. Bowland Outdoor Reared Pork, Beef & Lamb, is a small family run business who pride ourselves on providing excellent produce. Our livestock roam free on the rich, unspoilt pastures of the Forest Of Bowland ensuring Pork, Beef and Lamb of the highest quality.

Our pigs are a Large White cross Landrace breed coming from our 40 strong herd of Landrace sows sired to a Large White boar. Once weaned at 8 weeks of age the piglets are reared extensively in outdoor straw bedded kennels, fed on a natural cereal based diet and organic cheese whey.

Our Beef is mainly Aberdeen Angus cross cattle which share the grazing of our pastures with a small flock of hill sheep, producing "texel" lambs. These both are also reared extensively in a slower traditional way and eat mainly lush grass with a cereal and hay diet throughout the winter.

All our animals are then taken to a small local abattoir, then all meat is cut and packed professionally here on our farm. This ensures everything we sell can be traced back to its origins so that the Pork, Beef and Lamb products reach you in prefect condition.

Testament to this quality of meat production is the amount of awards we have won. These include Northwest Fine Food's 'Producer of the Year', 'Best Pork' and 'Best Overall Sausage' Awards in 2004 and 'Best Pork Category' for our Stuffed Pork Fillet in 2003.

Because we're 100% dedicated to investing in our growers' businesses, they're 100% committed to providing us with coffees, teas and hot chocolate that are simply delicious.

Working in partnership with small-scale growers around the world gives us the pick of every crop and our growers a fair price for their harvest. So, we can produce coffee, tea and hot chocolate of the very highest quality.

Our involvement doesn't stop there. Between 2003-6 we also invested on average 60% of our profits locally to help build a better future for growers' families and communities.

Cocoa direct drinking chocolate.We felt there was something missing in our lives so, in 2002, we added a creamy, luxurious hot chocolate to our range.

The recipe took a fair bit of crafting, but we found a high cocoa content mixed with some good cane sugar (all sourced from our grower partners in Latin America and the Caribbean) did the trick.

Cheshire farm ice cream

In 1986 Tom and Margaret Fell decided to add value to the milk produced by their 300 cows. As lovers of ice cream and with the limited supply of Luxury Ice Cream available at that time the decision was made to make a high quality affordable ice cream using fresh whole milk and fresh cream. In July 1986 the ice cream parlour opened to the public which was an instant success. Now visitor numbers exceed 250,000 a year.

The Cheese Shop - one of Chester's finest gems

Just inside one of Chester's main city gates you will find The Cheese Shop, run by Carole Faulkner. With its cheery blue and white striped blind, it has become a much loved feature of the city for both residents and tourists alike, who Carole has been supplying with some of the finest cheese in the world for nearly 20 years now.

The shop has a cellar underneath which gives Carole the advantage of being able to mature cheese on site. It is wonderful to browse in; every cheese is carefully flagged with a good description of its flavour as well as details of its maker, and tasters are cheerfully given to curious customers.

While it is crammed full with over 100 British cheeses, Carole gives pride of place to those from the North of England. "Up here, they like white cheese best" says Carole, "and they're very particular about their Cheshires and Lancashires". She stocks a buttery 15 month old Appleby's and two pasteurised versions - a crumbly Bournes and a creamy Windsors. All of Butler's hard rinded cheeses including Carole's favourite - the wonderfully tangy Trotter Hill Tasty Lancashire - are a permanent feature. She is also a big fan of Butler's Ravens Oak briestyle cheeses, in particular Burland Green and Swanley - all of which are made just down the road in Nantwich.

To make our hot chocolate we blend our dark chocolate with raw cane sugar and cocoa powder pressed from the same cocoa beans as the chocolate to add extra intensity. When added to hot, fresh milk the result is a cocoa-rich chocolate drink with a creamy froth, a rounded flavour provided by the chocolate and a balanced sweetness.

It all sounds a bit Miss World, but we want to leave things a little bit better than we find them. Our strategy for doing so is simple - firstly, only ever make 100% natural products that are 100% good for people. Secondly, procure our ingredients ethically. Thirdly, use ecologically sound packaging materials. Fourthly, reduce and offset our carbon emissions across our entire business system. Fifthly, lead by example at Fruit Towers by doing good things. Tregothnan English estate tea

Tregothnan has been home to the Boscawen family since 1335. The Estate, in Kent and Cornwall, is internationally known for its fine 'English Estate' products grown and produced with a sustained passion on Tregothnan land.

Tea was first mentioned in British literature in 1615. The British took it to Africa and India, in fact wherever in the Empire it might be grown.

Tregothnan has a history of botanical firsts and is home to original introductions of Magnolia and rarities from Darjeeling. These Magnolias now tower to 60ft and are among the worlds largest in cultivation.

Tea comes from a special form of Camellia sinensis: Tregothnan was also first to grow Camellia ornamentally outdoors 200 years ago.

The belief in doing things well has persevered at Tregothnan: the Estate has stayed within the same family since 1335. Seven years of trials have been undertaken to achieve these fine teas that really deserve the accolade 'English Tea'!

Creating Tregothnan Tea
The search for the perfect tea was intensified when it was proven that high quality tea does well on the Estate in Cornwall.

From tea bush to tea cup: the first fresh leaves are plucked at dawn by hand. The 2 leaves and a bud are quickly taken to the withering racks where they are usually laid, supported by bamboo. They leaves are gently withered to allow softening.

Rolling then takes place if we are processing black tea. This can be literally rolling the leaves between two surfaces, traditionally by hand.

Oxidation is then allowed by spreading on a surface at a controlled temperature- this stage is also known as fermentation.

As the natural liquid in the cells interact the colour changes from green to brown. The final stage is then to dry the leaves to 2% moisture. Green tea varies from the above in that oxidation is replaced by steaming, this retains the green leaf colour.

All processes are entirely free of chemicals and have been sustainable for 4 millennia! 36 hours after plucking the fresh leaves the tea is ready for drinking.
